We have been on this search for the ‘perfect’ pancake recipe, for a while now. There are so many options out there for gluten-free pancakes, and we tried most of them. We didn’t like any of them. They were either too dry, didn’t cook right, or just tasted blah. Sounds a bit like the three bears. lol
Then we came across plantain pancakes..and these where “just right!” Simply delicious and scrumptious and very filling. We add sun butter to the pancake, roll them up and eat. You can also add maple syrup too.
Our new anytime meal.
Here is the recipe we used:
- 2 eggs (save one yolk to go on top)
- 1 scoop protein powder (we did one scoop perfect fit protein which is about 3 tbsp for one scoop)
- 1/8 teaspoon baking soda
- 1 tablespoon coconut oil
- 1/2 plantain (3 1/2 oz)
Directions: Blend in blender till smooth. Cook on skillet. Top with your favorite pancakes toppings.
